Let’s be honest, chicken breasts can be a real gamble. Sometimes they turn out juicy and delicious, and other times…well, let’s just say they end up drier than a flip flop in the Sahara. I used to be a committed pan-fryer, convinced that was the only way to get decent flavor out of those lean fillets. But then, my friend Magda from Poland introduced me to this recipe, and it completely changed my game!

This dish isn’t just about convenience (although let’s face it, who doesn’t love a one-pan wonder on a busy weeknight?). It’s about layers of flavor that build with every step. The creamy sauce infused with herbs soaks into the tender chicken and fluffy potatoes, while the cheesy, crispy top adds a satisfying textural contrast. Magda assured me it was a Polish classic, and after one bite, I was a believer.

So, ditch the frying pan, grab your oven mitts, and get ready to experience chicken night in a whole new way! Believe me, this recipe is so easy and so delicious, it’ll become a new staple in your dinner rotation.


Ingredients

  • Olive Oil
  • 1 Onion (sliced into strips)
  • 4 Potatoes (thinly sliced)
  • 1 Tomato (diced, optional)
  • 3 Chicken Breast Fillets (cut into pieces)
  • 2 Eggs
  • 200 ml Cream
  • Grated Mozzarella Cheese
  • Salt
  • Black Pepper
  • Curry Powder
  • Provençal Herbs

Instructions

  1. Preheat your oven to 180°C (350°F) with the hot air setting.
  2. In an ovenproof dish, drizzle some olive oil. Spread the sliced onions evenly across the bottom of the dish.
  3. Thinly slice your potatoes and add them on top of the onions. Season with salt and black pepper.
  4. Drizzle another layer of olive oil over the dish. Cut your chicken breasts into pieces, season them with salt and pepper, and then toss them to coat evenly. Arrange the chicken pieces over the potatoes and onions.
  5. In a separate bowl, whisk together the eggs, cream, salt, pepper, curry powder, and Provençal herbs.
  6. Pour the creamy mixture evenly over the chicken and potatoes in the baking dish.
  7. (Optional Step) If you’d like to add some extra flavor and texture, dice a tomato and set it aside.
  8. Cover the dish tightly with a sheet of baking paper and then top it with a sheet of aluminum foil. Bake for 30 minutes in the preheated oven.
  9. While the dish is baking, prepare your optional finishing touches. Grate some mozzarella cheese and dice the tomato (if using).
  10. After 30 minutes, remove the dish from the oven and carefully remove the foil and baking paper.
  11. Sprinkle the grated mozzarella cheese over the top of the dish. If you’re using tomato, scatter the diced pieces evenly. Drizzle with a touch more olive oil and sprinkle with some additional Provençal herbs for a fragrant finish.
  12. Bake the dish uncovered for an additional 10 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
  13. That’s all there is to it! Serve this flavorful dish hot and enjoy a delicious and easy weeknight meal.
