One-Minute Noodles



If you’re in a hurry but still want a satisfying meal, these one-minute noodles are the perfect solution. All you need are a few simple ingredients, and you’ll be slurping up delicious noodles in no time.

Ingredients

  • 1 serving of instant ramen noodles
  • 1/2 cup boiling water
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon Sriracha (optional)
  • Sesame seeds, green onions, and chili oil (for garnish)

Instructions

  1. Cook the ramen noodles according to the package directions.
  2. Drain the noodles and transfer them to a bowl.

  • 1/4 cup sweet bean paste

  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 cup water

For the noodles:

  • 12 ounces fresh ramen noodles

For the toppings:

  • 1/2 cup ground pork
  • 1/2 cup chopped shallots
  • 1/4 cup chopped garlic
  • 1/4 cup chopped ginger
  • 1/2 cup chopped green onions
  • Sesame seeds, chili oil, and fried shallots (for garnish)

Instructions

  1. To make the sauce, heat the oil in a wok or large skillet over medium heat. Add the yellow bean paste and sweet bean paste and cook, stirring constantly, until fragrant.
  2. Add the soy sauce, rice vinegar, sugar, and water and bring to a simmer. Reduce heat to low and let simmer for 10 minutes.
  3. Meanwhile, cook the noodles according to package directions.
  4. To make the toppings, heat a few tablespoons of oil in a wok or large skillet over medium heat. Add the ground pork and cook until browned.
  5. Add the shallots, garlic, and ginger and cook until softened.

Ingredients

For the broth:

  • 1 pound beef bones
  • 1 pound beef short ribs
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 1 apple, quartered
  • 3 cloves garlic, smashed
  • 1 tablespoon coriander seeds
  • 4 star anise
  • 8 Sichuan peppercorns
  • 1 tablespoon doubanjiang (fermented fava bean paste)
  • 1/2 cup soy sauce
  • 1/4 cup rock sugar
  • 1 tablespoon sesame oil
  • Water

For the noodles:

  • 12 ounces fresh ramen noodles

For the toppings:

  • Bok choy
  • ScallionsChili oil (optional)

Instructions

  1. To make the broth, place the beef bones and short ribs in a large pot and cover with water. Bring to a boil, then reduce heat to low and simmer for 1 hour.
  2. Add the onion, celery, carrot, apple, garlic, coriander seeds, star anise, Sichuan peppercorns, and doubanjiang to the pot. Bring to a boil, then reduce heat to low and simmer for 4 hours.
  3. Add the soy sauce, rock sugar, and sesame oil and simmer for another 30 minutes.
  4. Remove the pot from the heat and let cool overnight.
  5. The next day, skim off the fat from the broth and strain it through a cheesecloth.
  6. Heat the broth in a pot over medium heat. Cook the noodles according to package directions.
  7. Blanch the bok choy in boiling water for 30 seconds.
  8. Add the noodles and bok choy to the broth. Heat through.
  9. Serve the noodles garnished with scallions and chili oil (optional).

Tips

  • You can make the one-minute noodles even faster by using pre-cooked ramen noodles.
  • The one-hour noodles can be made ahead of time and reheated when you’re ready to eat.
  • The one-day noodles are definitely a commitment, but they’re a great way to impress your guests.
