Ingredients

  • 500g (17.64 oz) potatoes
  • 1 tablespoon cornstarch
  • 1 liter (0.26 gallon) vegetable oil
  • 50 ml (⅕ cup) vinegar
  • 3 liters (0.78 gallon) water
  • 150g (5.3 oz) ketchup
  • 2 cloves garlic, minced
  • 50g (1.76 oz) chili sauce (optional, adjust to your spice preference)
  • Salt to taste

Instructions

  1. Prepare the potatoes: Wash and peel the potatoes. Cut them into evenly sized sticks, about 1/2 inch thick.
  2. Soak the potatoes: In a large bowl, combine the potatoes with cold water and vinegar. Soak for at least 30 minutes, or up to overnight. This helps remove excess starch, leading to crispier fries.
  3. First fry: Drain the potatoes and pat them dry with a clean kitchen towel. In a deep fryer or heavy-bottomed pot, heat oil to 120°C (250°F). Fry the potatoes in batches for 5-7 minutes, until they are tender but not browned. Remove them with a slotted spoon and drain on paper towels.
  4. Second fry: Increase the oil temperature to 170°C (340°F). Fry the potatoes again in batches for 2-3 minutes, until they are golden brown and crispy.
  5. Season and serve: While the fries are hot, sprinkle them with salt. Serve immediately with your favorite dipping sauces like ketchup, mayonnaise, or a homemade fry sauce.

  • For an extra flavor boost, add 1 tablespoon of cornstarch to the water when soaking the potatoes. This helps create a light coating that crisps up beautifully during frying.
