How to Make this Delicious Classic American Cinnamon Rolls

Melt-in-the-Mouth Classic American Cinnamon Rolls

Prep time: 30 minsTotal time: 3 hrs 25 minsYields: 1 dz.

Ingredients

FOR THE DOUGH

  • Cooking spray
  • 240 ml warm milk
  • 2 1/4 tsp. or 1 (0.25-oz.) packet instant yeast
  • 2 large eggs, at room temperature
  • 5 tbsp. butter softened
  • 560 g plain flour
  • 2 tsp. salt
  • 100 g granulated sugar
  • 1/4 tsp. bicarbonate of soda

FOR THE FILLING

  • 110 g butter, softened
  • 170 g packed brown sugar
  • 2 tbsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt

FOR THE FROSTING

  • 170 g cream cheese, softened
  • 110 g butter, softened
  • 125 g icing sugar
  • Pinch of salt
  • 1 tsp. vanilla extract
  • 60 ml milk or double cream

Directions

Step 1

Lightly grease a large bowl and a 23 x 33cm pan with cooking spray. In a separate large bowl or in the bowl of a stand mixer using a dough hook, mix together milk and yeast until yeast is mostly dissolved. Add in all remaining dough ingredients on low speed. Continue mixing on medium-high speed until a smooth, soft dough forms and starts to pull away from the sides of the bowl, 15 to 18 minutes. Transfer to a greased bowl and rotate so that the outside of the dough is thoroughly greased. Cover with a kitchen towel and let rise until almost doubled, 1 1/2 to 2 hours.

Step 2

Meanwhile, make filling: In a large bowl using a hand mixer, cream together butter, sugar, cinnamon, nutmeg if using, and salt until light and fluffy, 3 to 4 minutes.

Step 3

Preheat oven to 200°C (180ºC fan). Turn the dough onto a lightly floured surface and dust with more flour. Roll out into a large square, about 45 x 45cm. Spread to edges with filling, then roll the dough into a log and cut into 12 evenly sized pieces, each about 4cm wide.

Step 4

Place rolls cut side-up in the prepared baking pan. Cover and let rise again until almost doubled, 30 to 40 minutes.

Step 5

Bake until golden, 20 to 22 minutes.

Step 6

Meanwhile, make the frosting: In a large bowl, combine butter and cream cheese and beat until light and fluffy. Add icing sugar, salt, and vanilla and beat until smooth. Gradually add milk (or double cream) to loosen the icing.

Step 7

Remove cinnamon rolls from the oven and frost immediately. Serve warm.
