INGREDIENTS
Salad:
- 6 cups spring mix lettuce
- 2 (10-ounce) containers of grape tomatoes cut in half
- 8 hard-boiled eggs sliced
- 1 (16-ounce) bag of frozen petite green peas thawed
- 1 small red onion
- 1 (16-ounce) bag of cauliflower rice
Dressing:
- 1 1/2 cups mayonnaise
- 1 cup sour cream
- 2/3 cup parmesan cheese
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
Topping:
- 8 ounces of bacon cooked and crumbled
- 4 ounces sharp cheddar cheese shredded
INSTRUCTIONS
- In a large glass bowl, layer all the salad ingredients, in the order listed, one at a time in rows.
- In a small mixing bowl, whisk together all the dressing ingredients until smooth. Spread the dressing over the top layer of salad, sealing the edges. Sprinkle the top with cheese and bacon. Cover and refrigerate for 6-8 hours. Toss and serve.
