Authentic Manado Tinutuan Recipe, Healthy and Rich in Nutrition

If porridge is synonymous with healthy food, the people of North Sulawesi have their own way of making it more nutritious. One of the famous Manado specialties is Tinutuan, famous for the rich nutrition it contains.

As a typical Manado dish that is suitable for vegetarians, Tinutuan porridge is filled with various vegetables. Want no animal protein? Then simply add fish. For those of us who don’t live in North Sulawesi, the Jambal salted fish fritters provide a delightfully savory, salty texture and taste. Cook porridge with various vegetables such as sweet potatoes, baby corn, Melinjo leaves, spinach, and kale.

Authentic Manado Tinutuan Recipe, Healthy and Rich in Nutrition

Ingredients

  • 300 g rice, wash thoroughly
  • 3 liter of water
  • 1 tsp salt
  • 2 tsp Royco Chicken Broth
  • 100 g pumpkin, peeled, diced
  • 75 g sweet potato, peeled, diced
  • 75 g young corn, cleaned, shelled
  • 75 g spinach, pick, wash clean
  • 75 g kale, pick, wash clean
  • 4 basil leaves, pick, wash clean
  • 2 lemongrass stalks, bruised
  • 1 green onion stalks, finely sliced
  • 2 turmeric leaves

Complementary

  • 150 g Jambal salted fish, diced, fried until cooked and browned

How to make

Step One

In a saucepan, cook rice with water, salt, spring onions, lemongrass, turmeric leaves, and Royco Chicken Stock. Keep stirring over medium heat until the rice is half-cooked.

Step Two

Add sweet potato, pumpkin, and corn. Stir well, cook until the sweet potato is soft.

Step Three

Add spinach, kale, Melinjo leaves, and basil leaves. Stir well. Cook until cooked and the porridge thickens.

Step Four

Remove and serve with salted fish.
