Ingredients

For the Pork Loin:

  • 1.3 kg pork loin
  • Salt
  • Black pepper
  • 2 tablespoons vegetable oil

For the Filling:

  • 150 g mushrooms, chopped
  • 2 eggs, grated
  • 150 g cream cheese, softened
  • Chopped parsley and spring onions
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

For the Wrapping:

  • 130 g bacon slices

For the Vegetables:

  • 1 large onion, chopped
  • 20 g butter
  • 2 tablespoons vegetable oil
  • 1-2 carrots, chopped (optional)
  • 3-4 potatoes, chopped
  • Salt
  • 1 teaspoon chili flakes
  • 1 teaspoon oregano
  • Black pepper
  • Chopped parsley
  • 4 cloves garlic, minced

For the Mustard-Honey Glaze:

  • 100 g sweet chili sauce
  • 60 ml honey (or maple syrup)
  • 60 g butter
  • 2 teaspoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice

Instructions

  1. Marinate the Pork: Cut the pork loin into steaks about 1 cm thick. Cover them with plastic wrap and pound them with a meat mallet or rolling pin until thin. Season generously with salt and pepper. Set aside to marinate while preparing the filling.
  2. Cook the Filling: Heat oil in a pan over medium heat. Add the chopped mushrooms and cook until browned, stirring occasionally. In a bowl, combine grated eggs, softened cream cheese, chopped parsley and spring onions, lemon juice, and minced garlic. Add this mixture to the cooked mushrooms and season with salt and pepper. Cook for another 20 seconds, then remove from heat and stir well.
  3. Assemble and Wrap: Spread the mushroom filling evenly over each pork steak. Roll the steaks up tightly and secure them with toothpicks. Wrap each roll with a bacon slice.
  4. Sauté the Vegetables: Heat butter and oil in a pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add chopped carrots (if using) and potatoes. Stir occasionally and cook over medium-high heat for 8-10 minutes, or until slightly softened. Season with salt, chili flakes, oregano, and black pepper.
  5. Make the Glaze: In a separate pan, combine sweet chili sauce, honey (or maple syrup), butter, Dijon mustard, soy sauce, and lemon juice. Stir until smooth. Add the sauce to the pan with the vegetables and potatoes. Stir to coat everything evenly. Bring to a simmer, then reduce heat and cook for a few minutes until thickened.
  6. Bake and Broil: Preheat oven to 180°C (350°F). Transfer the vegetables to a baking dish. Arrange the pork rolls on top of the vegetables. Spoon some of the glaze over the rolls. Bake for 30 minutes.
  7. Brown the Rolls: Increase the oven temperature to 220°C (425°F) or turn on the broiler. Brush the pork rolls with additional glaze and cook for another 5 minutes, or until browned and crispy. (Tip: Remove the pork rolls from the pan and bake the potatoes for an additional 5-10 minutes if they need more browning.)
