Ingredients

Mackerel:

  • 2 fresh frozen mackerels
  • Salt to taste
  • Ground pepper
  • Seasoning for fish (e.g., paprika, thyme, oregano)
  • Vegetable oil

Potatoes:

  • 6 raw potatoes
  • Salt to taste
  • Seasoning for potatoes (e.g., garlic powder, onion powder)
  • Ground pepper
  • Vegetable oil

Onion & Sauce:

  • 1 large onion
  • Pinch of salt
  • 1 teaspoon sugar
  • Coriander (fresh or ground)
  • 2-3 tablespoons 6% vinegar
  • 50 grams butter
  • 4 cloves garlic, minced
  • Dried parsley

Extras:

  • Parchment paper, soaked in water
  • Bell pepper (optional, for garnish)
  • Grated cheese (optional, for garnish)

Instructions

  1. Prep the Mackerel: Thaw the mackerel completely and pat them dry with paper towels. Season generously with salt, pepper, and your chosen fish seasoning. Drizzle with vegetable oil and set aside for 15-20 minutes to allow the flavors to meld.
  2. Prepare the Potatoes: Peel and wash the potatoes. Cut them into wedges or thick slices, depending on your preference. Season with salt, potato seasoning, and ground pepper. Toss with some vegetable oil to coat evenly.
  3. Caramelize the Onions: While the mackerel marinates, slice the onion thinly. In a pan over medium heat, add a drizzle of oil and cook the onions until softened and translucent. Add a pinch of salt and sugar, then cook for a few more minutes, stirring frequently, until the onions caramelize and turn golden brown.
  4. Assemble the Dish: Lay a sheet of soaked parchment paper on a baking sheet. Place the seasoned mackerel in the center. Around the mackerel, arrange the potato wedges/slices in an even layer. Top the onions over the potatoes and mackerel.
  5. Create the Sauce: In a small bowl, whisk together vinegar, coriander, minced garlic, and dried parsley. Pour this sauce evenly over the entire dish. Dot the top with butter pieces.
  6. Bake & Garnish: Preheat your oven to 200°C (400°F). Bake the dish for 30 minutes. For an extra flavor boost and visual appeal, add sliced bell peppers on top and bake for an additional 10-15 minutes, or until the fish is cooked through and the potatoes are tender.
  7. Serve & Enjoy! Remove the dish from the oven and let it cool slightly before serving. Garnish with grated cheese (optional) and enjoy this melt-in-your-mouth mackerel masterpiece!

Tips

  • Use fresh, high-quality mackerel for the best flavor.
  • Don’t overcook the mackerel – it should be opaque and flake easily with a fork when done.
  • Adjust the seasonings to your taste.
  • Serve with your favorite sides like roasted vegetables, rice, or salad.

This recipe offers a delightful twist on cooking mackerel. With its simple yet flavorful ingredients, it’s sure to become a go-to dish in your kitchen!
