  • 2 grams baking powder
  • Salt to taste


Instructions

  1. Prep the Potatoes and Onions: Wash and peel the potatoes, then cut them into small pieces. Do the same with the onion.
  2. Blend it Up: In a blender, combine the prepared potatoes, onion, and water. Blend until smooth and well combined.
  3. Mix in the Dry Ingredients: Pour the potato-onion mixture into a large bowl. Add the tapioca starch, baking powder, and salt. Mix well until there are no lumps. If the batter seems too thin, add an extra 10 grams of starch until it reaches a piping consistency.
  4. Shape and Bake: Transfer the batter to a piping bag fitted with a star tip. Preheat your oven to 140°C (275°F). Line a baking sheet with parchment paper. Pipe small dollops of the batter onto the prepared baking sheet, leaving space between them. Gently press down on each dollop with the back of a spoon or a cup for a flatter shape.
  5. Bake to Perfection: Bake the chips for 12 minutes at 140°C (275°F). Then, reduce the heat to 110°C (230°F) and bake for an additional 30 minutes, or until golden brown and crispy.
